Taste explosions from the portfolio of Chef Alessandro Frau, of both traditional and contemporary are offered.

Italian born, Chef Alessandro, former Executive Chef at the Sheraton Grande Laguna Phuket, is an innovative concocter of recipes, whose mission is to deliver an eclectic yet unpretentious selection of dishes.

Acqua restaurant is his conception and he is excited to unveil refined, imaginative dishes that he has been working on over the duration of his career. Acqua restaurant is his vision of the perfect dining place; with informal yet aspirational ambience complemented by a culinary voyage that really is unique.

We specialise in catering for individuals with specific dietary needs including gluten free and wheat free meals. Every one of our ingredients are specially selected from around the world to create the most exciting, healthy and tasty of menus.

Acqua restaurant use HACCP hygiene system, with the consultancy and products of Ecolab which is the global leader in cleaning, sanitizing, food safety and infection control products and services. Starters

  • Buffalo Mozzarella, trilogy of tomatoes, Taggiasche olives and baby basil leaves
  • Yellow fin Tuna and Swordfish Carpaccio with Pantelleria’s capers, cherry tomatoes, dried Musciame of tuna in lemon and mature extra virgin olive oil
  • Seared Foie Gras, pickled wild mushrooms, stuffed peperoncino, Moscato wine reduction and roasted onion marmalade
  • Burrata cheese with Culatello di Zibello (One of the finest Italian cured ham) and fresh figs
  • Fresh artichokes salad with Bottarga, celery and fresh sheep milk ricotta cheese dressed with fine extra virgin olive oil

  • Potatoes and herbs gnocchi with Veal ossobuco sauce
  • Black truffle paste risotto with wild asparagus and seared scallops
  • Risotto with taleggio cheese, wild rocket salad and sun dried tomatoes

  • Sardinian fregola pasta with clams, lobster and fresh tomatoes

Main Course

  • Slow cooked Veal Ossobuco on a truffle scented white polenta
  • Grilled Prime black Angus rib eye with roast potatoes and grilled oysters mushrooms (350gr.)
  • Grilled grain fed beef tenderloin on a potato and spinach purée, gravy juice and mixed wild mushrooms
  • Maine lobster a la Rossini, with pan fried duck liver, truffle bisque sauce and grilled bread crouton
  • Fillet of seabass cooked in Vermentino wine, with fresh artichokes, Potatoes, cherry tomatoes and capers
  • Grilled tuna fillet Tagliata on eggplants and zucchini, fresh cherry tomatoes, capers and oregano sauce
  • Roasted Black cod fish in Guazzetto of Mediterranean mussels and Taggiasche
